Glycation is a natural reaction between a protein (such as collagen and elastin) and a sugar.
The products of this reaction, known as glycotoxins, alter the mechanical properties of tissues, stiffening them. Proteins lose their mobility, elasticity and flexibility.
What's more, these glycotoxins disrupt cell function. Cells are unable to eliminate them, and their accumulation leads to cell death.
